2 Microwave Chicken Dinner Recipes For Camping

During the summer, my family loves to travel and go camping. Our trailer has a stove, refrigerator and microwave, so I find recipes that do not require the use of a microwave to do for family dinners when we are in the camp. The following 2 recipes can be fully realized in the microwave and require less than 1 hour from start to finish. You can also go the day before and bring to boil in the microwave if Sauce3 mushrooms desired.Chicken tablespoons butter (not margarine) 1 cup fresh mushrooms, sliced2 tablespoons finely chopped1 / 3 cup milk 1 brick cream cheese, cut into cubes1 / 2 teaspoon chicken bouillon base1 / 2 teaspoon table salt 1 / 4 teaspoon black pepper4 boneless, skinless chicken breastsIn a cast glass, combine 2 tablespoons butter, sliced mushrooms and onions. Microwave on high for 3 1 / 2 minutes, stirring half of cooking. When finished, add the milk, cream cheese cut into cubes, the chicken stock base, salt and black pepper. Microwave on high for 3 minutes, stirring half of cooking. Remove from microwave and set aside. In the other glass baking dish, place chicken breasts and 1 tablespoon butter. Pasta Microwave on high for 10-12 minutes or until fork tender. You want to mix the dough 2-3 times during the cooking process so that it does not stick. Drain and reserve. In a glass baking dish, combine butter and onion. Microwave on high for 3 minutes and then add the chicken breasts and cook on high for 10-12 minutes or until meat is no longer pink. In a bowl, combine tomato sauce, basil, oregano, salt, pepper and cream. (I like to use a silicone spatula.) Pour the tomato sauce on the cooked chicken breast and cook on high for 4-5 minutes. Remove pan from oven and sprinkle with parsley, mozzarella cheese and sliced olives on top. Place back in microwave and cook on high for another 3-4 minutes or until cheese melts. Serve over cooked pasta.
